Based on your above sentences, Bullseye could be your friend for a short time only.
It’s quite new now, and I expect some stuff to appear in the backports later, but still, the “cutting egde” will definitely wear off soon. 
If you change your mind, Debian can be your everyday workhorse, I think.
I ride Bullseye on my laptop since a week or so, and I plan to upgrade my desktop soon - just get some time to do it safely between a finished a project and a newly started one…
